My take on a Jean George summer classic. For those who saw it last night and asked for more details, here they are.

Cube watermelon and keep chilled.

When ready to plate, you can either put a dash of goat cheese on the plate or I also use a slice of prosciutto.

Put a dash of salt on the watermelon cube. Then a dash of lime rind. Then a bit of really good goat cheese.

Crush some white peppercorn and sprinkle on top. Top off with a dash of olive oil. I also add mystery syrup, sorry I cannot reveal.

Crisp some prosciutto and add as a layer of crunch.

Another dash of lime rind will add color.
